, the restaurant La Table de Montaigne offers a unique gastronomic experience. Chef Oli Williamson's cuisine offers a personal and responsible interpretation of global influences.

At just 32 years of age, Oli Williamson, the talented British chef crowned with the prestigious Roux Scholarship in 2021, is settling in Bordeaux. After shining for three years as head chef at the renowned 3-Michelin-starred The Fat Duck restaurant in Bray, and two years as pastry chef at the renowned 2-Michelin-starred The Green House restaurant in London, he brings his culinary expertise and exceptional savoir-faire to the Bordeaux region.

" Having already worked in some of the world's finest restaurants, I feel the time has come to use the skills I've acquired to develop my own cuisine ," confides the Chef, who is not on his first expatriate assignment. Having worked in the kitchens of San Francisco's Benu restaurant (3 Michelin stars) and Singapore's Zén restaurant (3 Michelin stars), he is well-versed in mixing influences.

It's an asset he'd like to use to " showcase French products and techniques ". And it's with all the experience he gained at the pop-up restaurant wastED, designed to raise awareness of the issue of food waste, that he hopes to: " Work with producers and colleagues who share a similar, conscious state of mind, as much as a passion for the best products ". A faultless career path and a commitment that promise a bright future for La Table de Montaigne.

Refined and varied menus

Chef Oli Williamson's passion for haute gastronomy is evident in every dish on the menu of this Bordeaux gourmet restaurant. High-end cuisine and impeccable service are the cornerstones of our Bordeaux restaurant. Once you've experienced Chef Oli's approach to cuisine and gastronomy, you'll never look at a restaurant meal in the same way again!

The Palais Gallien restaurant offers a fine selection of dishes for lunch and dinner. Three menus are available: a 5- or 7-chapter lunch menu and a 7- or 9-chapter dinner menu.

The lunch menu consists of canapés, a starter, a main course, a dessert and mignardises. Elaborated from tasty recipes, the dishes offered for your tasting are subtly accommodated according to the chef's inspiration to achieve high-end gustatory refinement.

The evening menu offers a tasting in 7 or 9 chapters. Dishes composed of traditional products, sometimes brought up to date, such as parsnips or beet, revisit sometimes forgotten flavors with great finesse. Thanks to original taste combinations, the chef honors local products and creates novelty by mixing ingredients in surprising ways. For example, scallops and butternut form a duo that's as unexpected as it is succulent, while the traditional clementine is suddenly sublimated by delicate and rare aromatic herbs such as cordifole and other glazed fresh market garden herbs.
